One of my favorite comfort foods is risotto. On New Year's Eve, I went to Wildwood with some girlfriends and I ordered Risotto with mascarpone, grapefruit and crab. It was delish! Yum! The menu at Wildwood sounds delicious although I have to say I’m a touch dubious about grapefruit in a risotto. I make a delicious (if I say so myself!) one with butternut squash, spinach and roasted garlic.

I’m obsessed with risotto, too. I am just never, ever sick of it. I think my favorite risotto is folding in greens like arugula at the end. I love the extra kick of arugula combined with the onion and romano in the dish. Divine!
that sounds AMAZING…and I just googled and found out that Arborio rice is gluten-free, so risotto is doable….
Wild mushroom risotto is one of my favourite things to make and consume!

My husband loves to make risotto and mentioned making it tonight! We like mushroom, and I’m also partial to sun dried tomato risotto. yum.
Risotto is definitely a favorite. And I’m also totally obsessed with rice pudding right now. Smitten Kitchen has an amazing recipe that I’ve made twice in the past few weeks. so yummy!

My other favorite comfort foods this time of year are:
a) Carmelized onions atop sautéed spinach, white beans and freshly ground pepper. It takes less than 30 minutes to make and is so very warming.
b) 1950s style vegetable casseroles
c) Mashed potatoes, always and forever! Sometimes with butter, sometimes with leeks, sometimes twice-baked. In any form, they never fail me.
Risotto is high on the list; also soup of any kind. And homemade bread.
I love risotto and I love to make it, since it causes me to slooooooow down. 🙂 This time of year I’m also a fan of breakfast foods for dinner. Yummy!
